The stalks (“kuki”) of the tea leaves contain a lot of amino acids, which account for the sweet flavour. These first flush stalks are also called “karigane”. The liquid of kukicha is lighter than that of sencha and contains less caffeine. Kukicha is an easy tea for first-time green tea drinkers. It is a refreshing tea, good to drink in the afternoon to reenergize.
