Sencha Hiko - Otsuka, Kakegawa

Made the way sencha was made before the process was mechanised. The leaf is left to wither and turned by hand, which lets a little oxidation happen before the steaming.

That gives it something no other sencha in our range has: a flavor closer to a high mountain oolong, with the sweetness of a Japanese first flush behind it. Japanese customers say it tastes like the tea they remember from decades ago.
